Purpose: This module forms part of the Bachelor of Consumer Science (Food Retail Management Stream). It will be useful to students interested in the general food industry, as well as students and concerned parties in the food industry who are interested in product development or those from other disciplines/areas who require an understanding of the food product development process. Students credited with this module should be able to: 1) Examine the fundamental principles of new food product development. 2) Design and theoretically develop a new food product or extension of a present food product. 3) Explore the financial and marketing aspects that may affect development, delivery, sales and acceptance of a new food product; and 4) Explain product commercialization, launch and evaluation. |
