Purpose: of this module is to outline the biological processes that occur in horticultural crops before and after harvest that directly impact product quality and the practical strategies that are used to reduce rates of postharvest decay and maintain quality. Students who complete this module can demonstrate an understanding of the biological factors and procesess that determine quality of horticultural crops, the procesess that determine quality of horticultural crops, the procesess that contribute to crop deterioration and strategies for reducing the rate of postharvest decay. This knowledge will be readily applicable for solving problems associated with the handling and storage of horticultural crops but will also make the student be better informed consumer.
