Purpose: of this module is to outline the biological processes that occur in horticultural crops before and after harvest that directly impct product quality and the practical strategies that are used to reduce rates of postharvest decay and maintain quality. Students who complete this module can demostrate an understanding of the biological factors and processess that determine quality of horticultural crops, the processess that determine quality of horticultural crops, the processess that contribute to crop deterioration and strategies for reducing the rate of postharvest decay. This knowledge will be readily applicabe for solving problesm associated with the handling and storage of horticultural crops but will aslo make the student be better informd consumer.
